Chocolate-chip muffins

Chocolate-chip muffins: (Makes 12)


Pre-heat oven to 180 C (375 F)
Muffin tray
Muffin liners(12 cups)
2 bowls (for wet and dry ingredients)
Measuring cup

Dry ingredients:

1 3/4 cups (230 g) - All purpose (white) flour
1 1/4 cups (265 g) - Brown sugar
2/3 cup (60 g) - Cocoa powder(Unsweetened)
1 tsp - Baking powder
1 tsp - Baking soda
1/2 tsp - Salt
1 cup - Choc-chips(Add them in a little flour.. this helps the choco-chips to spread evenly in the batter)


Add everything in a bowl in the same order and whisk together or mix with your hands.There should be no lumps formed.

Wet ingredients:


2 - large eggs (room temperature)
1 cup (240 ml) - Butter milk
2 cup - PURE vannila extract
1 1/2 cups (113 g) - Butter (Melted and cooled to room temperature)

Add 2 eggs in a bowl and whisk.Now add 1 cup of butter milk and 2 tsp of pure vannila essence and whisk well.Add butter and whisk again. The batter is ready :)


Now put the wet ingredients into the dry ingredients and stir well with a spatula and mix well with your hands. DONT mix it too much else the muffins will get hard.
Now line the tray with the muffin liners. If you don't have the liners at home you can as well butter the tray(i did that) and then add the batter with a round spoon or an ice cream scoop so that it fits in well. Don't fill it fully with the batter. Fill it half because when the muffin bakes it rises up. Let it bake for 15 mins and then check it by putting a tooth pick in and if it comes out clean then tadaa! your muffins are ready :) Take the tray out and cool it on a cooling rack. Now for the icing follow the recipe below..

Chocolate Icing:

2 3/4 cups - confectioner's sugar(powdered)
6 tbsp - Cocoa powder (Unsweetened)
6 tbsp - Butter
5 tbsp - Evaporated milk
1 tsp - Pure vannila extract

> In a bowl, sift together the confectioner's sugar and cocoa powder, and set aside.
> In a large bowl, cream butter until smooth,then gradually beat in sugar mixture alternately with evaporated milk.Blend in vannila extract.Beat until light and fluffy.
If necessary adjust consistency with more milk or sugar. You chocolate icing is ready :)

Now decorate the muffins with the icing prepared. I didn't have an icing bag at home then,so couldn't do much. I just spread the icing on the muffins and sprinkled some chocolate flakes on top(I used hershey's kisses).
Yayy! My muffins are ready :):)
